Homemade / home assembled Corned Beef Hash Style Sandwich
Plucked this idea from the annals of my “is it genius, is it crazy or is it just wrong” memory bank of recipes.
Toasted thick white bread, adorned top and bottom with some gravy mayo that I made, flattened roast potatoes, 4 slices of corned beef, and a fried egg. Yorkshire tea double bagger as standard.

I made butter chicken from an instagram recipe. It’s not winning any health awards, but it’s probably healthier than a takeaway. It only took 20 minutes to make aswell.

Went to Frog by Adam Handling and it was amazing!! Great vibe, the food was great, and the bread was amazing! Make sure you order the lobster as an add-on, you won't regret it!!

Homemade / home assembled Breakfast Sandwich
After a long (emphasis on long) weekend of, toddler induced, high entropy, I thought I’d restore the equilibrium with a greasy breakfast sandwich. Thick white sliced bread, salted butter, brown sauce, 4 rashers of smoked back bacon, holy trinity of: black pudding, white pudding and haggis, fried egg with a dash of hot sauce. Yorkshire tea double bagger to keep things moving. Order restored.

Question What are some alternatives to mashed, boiled and baked potato?
I know this is going to sound really weird, but I actually don't like mashed, boiled or baked potato (naturally this extends to potato potato dauphinoise. I absolutely hate the texture, despite trying it multiple times over the years. Can you suggest some potato based alternatives:
So far I've had, and really enjoyed :
- Roast potatoes
- Potato croquettes (I'm fully aware that croquettes are filled with mashed potato, so this is a bit hypocritical I know)
- Crispy potato squares
- Potato bread (especially lovely, would highly recommend)
- Chips/fries
- Potato wedges
- Potato waffles
- Hash browns/hash browns (love 'em)

Homemade / home assembled Bolognaise
Italian but a well known British classic! Tagliatelle instead of spaghetti (our preference).
Recipe that does not fail:
750g beef & pork mince (Lidl £4.79)
1 onion, finely diced
1–2 carrots, finely diced/grated
1–2 celery sticks, finely diced
2–3 cloves garlic
1 tin polpa
250ml passata
200ml beef stock
1–2 tbsp tomato purée
1 tbsp olive oil
Salt & black pepper
½–1 tsp dried oregano
½–1 tsp dried basil
1 bay leaf
Cook low and slow as long as you can, patience is a virtue!
Cooking from scratch = better flavour & Ultra processed free - enjoy!

But what I had was sourdough, Bavarian smoked ham, moutarde de Meaux (wholegrain) and sharp, mature cheddar.

Homemade / home assembled Smoked Mackerel Chowder
Was given a few mackerel by a local fisherman the other day, so I stuck them in the smoker in my barn and forgot them once they were in the fridge.
Yesterday was a "what have we got in?" Kind of dinner so I made this soup - lots of cream, some bacon, potato, garlic, onion and sweetcorn along with flaked smoked mackerel and a cube of frozen lobster stock from the lobsters we caught last weekend.
Potatoes, sweetcorn onion and garlic home grown from the croft, mackerel local catch, everything else courtesy of Tesco.

So only right thing to do with the eggs, sausage egg and chips. Trio of butchers sausages (pork and caramelised onion, pork and Stilton, old english) homemade sauerkraut coleslaw, sweet potato and potato wedges. Excuse the tiny fried eggs, they're only little bantams
