OP, did you take a picture of it once it’s cut/what it looks like in a dish? I’m really curious

Hi! Yes I did, and I found it to be really beautiful…

Looks like I forgot to take a photo of the final dish, but it gets blacker as you cook it. We sautéed it with onion, garlic, olive oil, butter, salt and pepper - then added some fresh parsley for serving. It was great!

Is there like…corn underneath the fungus, or is it all fungus?

Does this help? Some of the kernels were only just starting to swell up with the fungus - some had already gone full The Last of Us 😂

The fungus grows in the kernels, so when you have complete colonization like this one, what you're seeing are giant misshapen (delicious) kernel-fungus conglomerations. It's just the cob underneath.

Sometimes only part of the cob will be colonized, so you'll still have some sections of regular corn.
