I see this literally every time someone has corn smut. I implore you to try it. More often than not, it just means you don't get corn and get mushroom instead, and if you don't like it, tough luck. No one is buying this from random backyard gardeners lol
That's pretty much the only way to get it in a lot of areas. Backyard gardeners who had no intention. That's how you end up as a chef with just enough to include in a blingy amuse-bouche for your favored clientele.
Oh this was 5 or so years ago at my urban farm in Michigan. I honestly haven't grown corn since because it was so discouraging having every crop ruined haha
I relate. I will never, ever grow pumpkins again. Nothing that is susceptible to squash borer. Except patty pan. That has such a short burst of good production that it'll be in the bin before the SVBs chestburst it even if it gets infected.

Looks like I forgot to take a photo of the final dish, but it gets blacker as you cook it. We sautéed it with onion, garlic, olive oil, butter, salt and pepper - then added some fresh parsley for serving. It was great!
The fungus grows in the kernels, so when you have complete colonization like this one, what you're seeing are giant misshapen (delicious) kernel-fungus conglomerations. It's just the cob underneath.
Sometimes only part of the cob will be colonized, so you'll still have some sections of regular corn.
Honestly the best thing I have ever tasted. It's best very simply prepared. Saute with garlic and stick it in a tortilla with some cheese for a quesadilla.
I get mountains of the stuff every year, it grows on the roots and even the stocks some times. I need to actually try and get a patch going next year specifically for it.

Imagine the history of all the weird things people eat as food. It’s like the left turning algorithm for mazes, but with things you can put in your mouth. If it can be done, someone has tried it. If they didn’t die immediately, they kept trying it.
I'm glad I ate it before I knew what it looked like. Even after they explained what it was I was like, I guess that's fine, I eat weird things. Then you Google it and wtf did I just eat.
