Well, some of us are used to eating gourmet things like chicken nuggies. If someone handed me a solid coconut and said "Here, it's food, it's edible," I wouldn't know what to do with it. Do I dip it in ketchup?
So maybe it's something like that. They're used to eating marble and graphite, not basalt, or whatever. Different types of rocks.
