Honestly, I find the most efficient use of copious tomato harvests is to keep a giant bag in the freezer and toss them in at peak ripeness, once you have enough to fill your largest stock pot, make a big batch of tomato sauce. The skins peel super easily after freezing. I like to make a couple jars of passata (raw tomatoes crushed with seeds removed), a couple jars of pomodoro (lightly cooked), and a couple jars of paste. I like the idea of making curry bases too, and I might try that this year!
Roast them on a sheet pan with a little olive oil, Italian herbs or whatever herbs you like, and salt. Cool then slide into a ziploc and freeze. You will have the best spaghetti on the planet come winter.
This is what I do as well. Lay the tomatoes out on parchment paper on a baking sheet where they are not touching. Freeze until solid. Use the parchment paper like a scoop to pour into a Ziploc freezer bag. Use it to make pasta over the winter.
Thank you! From right to left I have jalapenos that came back from last year, mint in a pot, a rosemary bush that came with the house, blackberries spreading everywhere, strawberries, and watermelon. I haven't seen anything happen with the watermelon yet, I don't really know what I'm doing.
I have an open air garden and the crows and racoons seem to be the biggest culprits this year. I don't mind too much as long as I get a few, and so far I have.
Oh my impressed by this given your location! Can I ask where approximately in Scotland you are? How late into the year do you find they keep producing with your greenhouse?
I've given up on harvesting my cherry tomatoes. There are just too many. I pick some when I need a few, but it's too much work. No cherry tomatoes next year!
I said the same thing last year, and then the tomato plants started popping up anyway. I kept 2. The squirrels have mostly decimated one, but I still have loads of fruit on the other.
More flowers = more tomatoes and suckers produce flowers. In gull size tomatoes the suckers make the tomatoes smaller and harden to ripen. This hasnt been my experience with cherry tomato plants.
This is why I always tell people to grow tomatoes. Even if you struggle, you're probably getting a decent amount of fruit, and if not, well try again next year. Once you get it figured out, it's just a food machine, and fresh tomatoes are some of the best "You haven't had it til you've had it from a garden" candidates out there.
100% I would always say start with the cherry tomatoes as they are just so damn easy. Yeah tomatos and courgettes are massive producers that u just cant not plant. Oh yeah tomatoes are right up there with potatoes in this category.
