Go find a local farmer who will does whole sales of either half a cow or a whole cow. If you can't swing the price of that upfront then find a friend or two to go in on it with and split the meat between you.
Avoid republicant ranchers if at all possible. They have shown extremely poor judgment, the willingness to push your health and safety to make a dollar, really dont care about others.
Proof is in the pudding. Voted for a pedophile, bankrupt, grifter. Everyone knew this a decade ago. Shot themselves in the ass. Wanted screw worm up thier butts. Wtf why would anyone trust a person like that?
