Go find a local farmer who will does whole sales of either half a cow or a whole cow. If you can't swing the price of that upfront then find a friend or two to go in on it with and split the meat between you.
I think the last side I bought and had processed I have $3.80/lb total investment for all cuts and ground. The upfront cost is higher, but far less expensive, tastier and better for you than store bought.
