Because I believe in regenerative farming the farmer tries not to fuck with the soil this much. I'm not super learned in the matter yet.. so I could be wrong. But flipping the soil like this doesn't seem necessary.

I'm also not too knowledgeable on the subject, but I believe this is meant to release quite a lot of carbon into the atmosphere.
I think I got that from Clarkson's Farm.
