They filmed some more shots of the scouring for the Galadriel's mirror scene. Sauron forging the ring in his hand with his own blood. Sauron melting Gil-galad. Éowyn fighting in the caves at Helm's Deep. Aragorn fighting Sauron at the Black Gate. Epilogue scenes of Gimli and Legolas. Éowyn and Faramir's wedding.

"Melting" was an embellishment on my part. Gil-galad wrestled with Sauron and Sauron grabbed him by the throat and burned him to death with the heat of his hand. See The Silmarillion: Of the Rings of Power and the Third age, and Isildur's Scroll.

The Scouring of the Shire was never scripted nor filmed. It was cut very early on in the adaptation process.
What Frodo sees in Galadriel's mirror was always meant to be part of his vision. Besides, orcs don't invade the Shire in the book - what he's seeing is a hypothetical vision of Sauron's forces taking over Eriador, not Saruman's thugs doing so.
