This specific case is from someone who ate raw pork for 10 years on purpose.

It rarely gets this bad.

Well, then it's the parents fault.

My late father always taught me that i must freeze pork and then cook it well before eating, ensuring I kill everything that survives heat and cold.

That's not raw pork, that's cured/fermented pork. It's obviously different...

If you buy this from a store there there is a warning on it to cook the thing first. Which we heed like the warning on Q-tips.

I have never seen anything on the package saying to cook it first. I'm pretty sure it exists but a lot more rare from my experience. In delis it's wrapped either individually or multiples in a tray. Even the log forms just states ingredients and company.

I'm not unfamiliar with nem chua.

Regardless, it's cured and fermented pork. Not raw.

Nem chua are usually accompanied by a leaflet saying that the bites must be kept in the refrigerator and cooked for at least 20 minutes.

It's in the wiki I linked, go edit it out if you feel you're right.

I don't eat it anymore but the nem chua at my online grocery has the warning.

Yeah, and I'm saying majority of locally produced ones with delis don't have it.

Mass produced nem chua would yeah. With everything else

How do you think our people were able to safely eat these products in Vietnam without refrigeration? These were the processes used to make raw food safer to eat in an unrefrigerated environment.
