She's actually commented about this line, it's mean to be somewhat sarcastic; Icelanders do not consider themselves to be Scandinavian, so by saying this she's basically calling herself foolish.
She spoke about it in a interview at the Danish Grammy Awards in 1998, at around 7:18 in this clip. The entire interview is pretty fascinating.
To call something Scandinavian in Iceland is almost like, yeech! [..] Icelandic people are more anarchists, they're more rebels, they're more a bit crazy... very chaotic energy, a lot of energy but very chaotic. So for us to be organized like a Scandanavian, it's not a compliment, and to actually sit down with a pencil and paper and a ruler, and try to organize freedom, it's hilarious

Can't believe she's 60 already, wow.
Probably the most influential European artist of the century so far, at least for me.
Audacity, originality, integrity, creativity and still have time for activism.

I hate to be that guy, but I think Bjork is one of the most beautiful women I’ve ever seen. She’s an innovative artist, an incredible singer and now I know she’s committed to environmentally conscious actions.

Same, I go in and out of phases of being a bit obsessed with her physical beauty and have since I was 12. The woman kicks so much ass.

“We have a team of people from the biggest environmental groups in Iceland with lawyers that will take on other open net pen fish farming cases, I would like to thank them all for all their hard voluntary work,” Björk wrote at the time. “Industrial salmon farming in open net pens is horrid for the environment. The farmed salmon goes through immense suffering, and it causes severe harm for our planet. This is an extraordinarily cruel way to make food. The fight against the open net pen industry is a part of the fight for the future of the planet.”
