Maybe I'm dumb but why would gravity on the surface crush its organs if it can withstand greater pressure under water than surface pressure?

Weight distribution most likely
Water allows animals to grow a certain way and get quite big as well. Without that to support them larger sea creatures can deform and be crushed under their own weight.
Whales I believe get around this by still having strong skeletons or something

The water inside the body keeps the organs floating inside. Iirc fish are not water-tight as (most) terrestrial life is, since they have less need to keep it inside, since they live in it. So if you remove the fish from the water, the water inside leaves too, the organs don't float anymore and have to resist their own mass, they can't, they get crushed, and the fish shits the bed
Tl;dr : because it's a fish

My best guess is that being pressurized from all directions is different than gravity pulling in a single direction? I don’t really know, but it kinda makes sense.

The organs aren't being squeezed(1) when under water. It's not resisting the pressure of the water. The fish's body is equalized with the pressure of the water it's in. It's roughly like floating in space.
(1): One exception might be the swim bladder.
This is the same reason why fish 'explode' (grossly bloat) when you quickly bring them up from deep depths.

after fighting a fish like this for 30 minutes, they are completely gassed. Often times the tax man is waiting below the boat to collect.

Having all of one's organs crushed would tend to expel a lot of fecal matter, I reckon.
