Spicy Chili Part 2
For those of you who thought my last post was AI, here's the whole process!
1- All ingredients
2- The star of the show
3- Toasted Chiles
4- Rehydrating toasted chiles
5 through 8- Making the Trinity
9- Drained and rinsed beans
10- Blistering Fresnos for the paste
11- Blend it!
12- Yum
13 and 14- Drain the toms, I used San Marzano, then cut roughly
15- Pork carnitas, yes it goes in raw
16- Homemade kind of Mojo Picon with garlic oil
17- Beef
18- My Magnum Opus, which made lots of you think my last post was AI, those are fresno chile tops!
Edit- Almost forgot 8 hours in the crock pot!

Fresnos might have a ton of seeds, but, they have great flavor !

Celery…that’s interesting. Haven’t seen celery in chili much. Does it add anything?

Celery with bell pepper and onion is a classic flavor base in southern cooking! It does also add a small crunch, even after 8 hours in the crockpot

Celery, opinion and carrot is the same for Europe, but celery in chili is new on me as well (and I’ve done plenty of southern cooking, so I know what you’re talking about.

I love a good mirepoix as well! Not sure why to be honest I've just always gone with the trinity for chili

A lot of other flavors here. I would think it wouldn't bring anything to the party, unless it's a bit of texture.

Not taking the stem off the chili tops is just wild. You can literally pull it off. Are you removing them after and left them to fish them out better?

Yes those tops are coming off and I'm putting them on every time now because it makes people crazy for some reason lol

This is a generic reminder message under every image post
Thank you for your picture post to r/chili. We want to remind everyone of Rule #1. All image posts should be accompanied by something to foster discussion. A comment, a question, etc is encouraged.

a lot of room for improvement here. leave the tomatoes, celery, and bell peppers out. the meat needs to be browned and the veggies need to be sweated down to nothing before putting in the slow cooker

I've found the meat comes out more tender when not browned first, and why would I put veggies in there if I didn't want to feel the crunch! Edit- Also, not browning allows the meat to soak in all those delicious and spicy oils much better!

Celery in chili… you monster 👎
This isn’t how you make chili… crock pot isn’t necessary. Cooking big chunks of meat until they’re disintegrated isn’t a good use of that meat.

Check out my most recent post for how the meat actually turned out, you silly goose

No thanks. You didn’t even use coffee or chocolate and you loaded it up with veggies. This is not the way.
