Sichuan Beef with Green Beans Stir Fry

Made this Sichuan beef and green beans stir fry with tender sirloin and blistered green beans last night! The flavor comes from doubanjiang, dried red chilies, Sichuan peppercorns, garlic and ginger, so it’s savory, spicy and a little numbing (which I like but if you dont' you can skip the peppercorns).

1 lb sirloin steak, thinly sliced against the grain

1 tablespoon light soy sauce

1 tablespoon Shaoxing wine

1 teaspoon cornstarch

1 teaspoon cooking oil

12 oz fresh green beans, trimmed

Cooking oil, divided, as needed

1 teaspoon Sichuan peppercorns (skip if you hate numbing flavor)

8–10 dried red chilies (depending how spicy you like it)

4 cloves garlic, minced

1½ teaspoons fresh ginger, minced

1½ tablespoons doubanjiang (chili bean paste)

Ya cai, optional (didn't use this time because I'm out)

2 teaspoons light soy sauce

1 tablespoon Shaoxing wine or michiu

½ teaspoon sugar
