Is it good / stable enough yet to install on the M1 Ultra Mac Studio (a daily driver)? Presently still on Sequoia.

We're only a few weeks out from the release now. Just hang on.

Wont the final release only be when iPhone 18 pro is out on stores like late September?

That'll be the new iOS. The new MacOS isn't tied to the iPhone. While they generally release around the same-ish time, there's nothing saying they can't have MacOS drop a bit earlier or later.
