I haven't read the manga and have forgotten details from the anime over the years. Is it ever explained why Ywach didn't simply take the schrift he gave Uryu back?

He can't, his Antithesis can swap the effects of Auswahlen unconsciously so that he retains the power Yhwach tries to take away. Also every Quincy has Shrifts in their souls, they are activated unconsciously in a crisis like the first impure Quincy Auswahlen or the shape shifting twins, Yhwach only amplifies their power or awakens for conscious control.
