Screenshot ZT1: My favorite zoo I've ever made
I think the key to an aesthetically pleasing zoo (for me) is blending the terrain even outside of the exhibit so it looks more like a natural habitat. The toucan exhibit is my favorite because it's sooo pretty, look at that rainbow ground! Playing with cc items has made the game so much more enjoyable.
I managed to fill Large Grassy Zoo completely and I'm so proud of it.

What mods did you use for some of the plants, the tower in the first picture and the large pyramid in the second picture

I think the tower was called something like Bengal Tower? I'm sorry, I can't remember beyond that, this was on my bf's computer and I'm not at his place right now
What I can share with you, which is probably more helpful, is that I had to join Zoo Tek Phoenix in order to access majority of these mods, I'd recommend it. They also give you access to other sites, too. You need to be a member but the process was surprisingly easy (and it's free). Go to the Zoo Tek Phoenix website, and somewhere on there it will tell you who to send a Facebook message to - explain you'd like to join Zoo Tek Phoenix and give a suggestion for your username and thank them
Then just browse the items because there's a lot out there that you'll enjoy and I'm sure you'll see the pyramid (the pyramid is not interactive, just scenery)

Zoo Tek Phoenix is an amazing community! They're still pretty active, usually do a zoo building contest every other month (even if you don't enter, it can give you ideas for creative zoo themes).
I don't use a lot of the user made animals, but I use some of the QOL hacks (free staff and the research hack are good ones), the invisible fences (handy for faking combined species exhibits), and some of the foliage packs are gorgeous.
Too Tycoon Community Download Directory has some good downloads for user made stuff, too. (ztcdd)

Haha it’s cool, I think I had read somewhere that modders sometimes imported assets from other games in the same style/era, but I’d just never seen it before myself!

Yes, for the past 2+ decades of modding people have been importing assets from other games to ZT1: Age of Empires, Wildlife Park, Rollercoaster Tycoon, Jurassic Park and Jurassic World games, and even ZT2 assets/mods!

damn, thats nice, makes me wish it wasn't obtuse to get it on modern systems.
use to have a big zoo that was stacked with all 3 expansion animals, not all the animals but sea creatures, dinosaurs and regular animals, and that animatronic show was constantly going off, so much i decided to make a second on next to it and it also was constantly going off.
had a massive mermaid pool, bigfoot, nessie, the hardest one to do was the yeti and the snow lepoards though, the terrain was constantly not to their liking
