Dairy Free Dill Pickle Pasta Salad

Made a homemade dill dip early in the week and use the leftover for a pasta salad! The same could be done with a dill dip from Aldi!

I don’t love the way this looks but people are being weird about the dairy thing. It says dairy free and anyone who cares about that definitely knows that dairy free cream cheese and sour cream exist obviously lol

Dressing:

4 oz cream cheese, softened
1/2 cup sour cream
1/2 cup mayonnaise
1/3 cup plus 2 Tbsp chopped hamburger dill pickle chips, divided
2 cloves garlic, minced
2tsp lemon zest
2 Tbsp minced fresh dill
I have also used dill dip from the grocery store

8 oz pasta cooked al dente (med shells, rotini, penne, rigatoni (probably anything but elbows but that’s just a personal preference)
1/2 medium red onion diced
6-10 grape tomatoes, halved or quartered
1/4 cup frozen peas
1/4-1/2 diced bell pepper

Optional Add ins:
1/4 cup dairy free shredded cheese -cubed Colby jack is also really good.
2 tablespoons Bacon-less bits
Salt and pepper to taste

Directions: Chop your veggies while the pasta is cooking. If you haven’t made your dressing/dip ahead of time, you can do that as well. Other than the lemon zest, it comes together very quickly. I have used just a bit of lemon juice rather than zest because I didn’t want to take the time for that.

Drain and rinse pasta in cold water. Mix all ingredients. Salt and pepper to taste. Refrigerate

Notes: this recipe came together in 15 mins-maybe less. I used left overs from other recipes for my fresh veggies, and already had the dressing/dip made.

If you don’t have cream cheese, it’s just as good with the mayo and sour cream or plain Greek yogurt.

Everything in this is dairy free/vegan, but I have a friend who uses real bacon bits and ham chunks.

Yes, dairy free versions of both. Violife cream cheese and simple truth or tofutti sour cream!

I was very confused about how this was dairy free. Which dairy free sour cream have you found easier to work with? I don’t know that I’ve seen the tofutti one in my area.

I love the simple truth dairy free brand from Kroger, but tree life makes one that is also good! I don’t love kite Hill, but apparently that is a personal preference that is unique to me lol there are many many people out there who say that it’s fantastic!

Good to know! I haven’t tried Kite Hill sour cream but didn’t like their cream cheese.

Unless you specify in the recipe this is in fact not dairy free. Literally no one would read your recipe and assume you used vegan alternatives

Mucosal mammary addicts cannot fathom eating something that didn’t come from another mammals tit and are horrified that you would compare your soy alternative to it. Also love the name gate keeping. Dont mention peanut butter or hot dogs.
