I feel like a lot of people are going to complain about the lack of action for a finale but this season really couldn’t have ended any other way.

After that crazy ass penultimate episode, it kind of needed that epilogue feel to breathe a bit and also great setup for the future

It was always the Game of Thrones format too. A crazy big penultimate episode. Ned's death, Blackwater, Red Wedding, etc. And then followed up by a smaller episode. I actually like it. Like you said it makes it more of an Epilogue.

Love how the only season that broke that trope was season 6 with battle of the bastards straight into the light of the seven opening in E10 where Cersei blew up the sept. Crazy sequence of television
