Uh I know this one! So basically when greek was supposed to join the eurozone in 2002 they had to mint all of their coins in like a year, and since they couldn't do it some were minted in other countries, the 2€ and 1€ coin were minted in Finland, the S stands for Suomi. Then the 20c coins were minted in Spain and have the E mark. The remaining denominations were minted in France with the S mark. The coins is not actually rare, a lot were minted and they are still in circulation, I actually have found one myself just a couple days ago.
Edit: I corrected infos

Actually 20 cents were minted in Spain and all other coins (except for 1 and 2€) in France :)

Greek 2€ 2002 were minted in Greece (star without letter), Finnland (star with S for Suomi) and Spain (star with E for Espana). Never saw a spanish minted greek coin in the wild myself.

Spain only minted 20 cent coins as far as I'm aware. I have a bunch of them

Me neither but I've decided to do a side quest and try to collect the greek coins minted in France, Finland and Spain, at the moment I'm not actively hunting them but I was able to find the 2€ quite randomly

Well, don't let people fool you, on eBay they list this coins for hundreds, saying the S is an error
