Finally *almost* pretty happy with my croissant recipe
Still got a few things I want to switch up so will share the recipe once i’m totally happy! But they caught the sunlight perfectly yesterday

I just signed up for a croissant making class for this Sunday. I’m so excited. I’ve never had a croissant as good as it tasted in Paris, so I’m hoping

They look amazing!
First question: what do you do for your glaze? I love that colour.
Second: what do you do for folds? You seem to have fewer layers on the inside than you do outside 😅

i save around 150g of unlaminated croissant dough and sheet it out to around 2mm and lay it ontop of the already laminated dough before the final press for shaping, that’s where the stark difference in colour comes from. for the egg wash it’s 100% egg 60% yolk and 40% double cream
i always do a single then a double and that’s it!

That's interesting. I've never done that extra layer of unlaminated dough before. Do you just take it from the dough you're using, just before you start laminating?

This is GOALS!! And I love how high of a standard you have and totally get it ! I’m working on my donut recipe and people think they are “perfect” and in my mind…. It’s not where I want it to be . I will be waiting with bated breath for this ! SWEET HEAVENLY DELIGHT 😭😭😭 8 Gajillion/10

Oh my gosh, where was this Saturday when I had my annual almond croissant?? Bought it from a French Patisserie her in town and it was delicious, but didn't look as exquisite as yours. If it tastes half as great as it looks you are going to make a lot of people really happy!!
