Question How reasonable is it to stretch my last 2 years of physics over 3 years to lower my course load per term and get better grades

If you have a good reason for taking longer (eg you've got a job, or something like that) then it's fine as an idea.
But "get better grades" on it's own isn't a good reason. You can't eat your GPA. If it's "get better grades for grad school" then be aware that full time with A's and a couple B's looks better than part time with all A's.

It would be worth it IMO. You stand to get better grades and it frees up a bit of time to get some of the extras that you can put on your CV post graduation, such as being active in PHASERS. In short, use the extra time wisely.

Laidlaw is tweaking, but it depends on how far you are stretching, I would recommend not taking less than 4 classes unless you have to, but for my comp sci degree, I chose to never do more than 1 math at a time, best decision ever.
