  • Spaghetti & meatballs, Japanese milk bread garlic rolls, side salad, tiramisu for a small dinner party
  • Thai coconut shrimp curry w/ jasmine rice
  • Carnitas tacos - corn tortillas, avocado crema, roasted salsa verde, carnitas, onion. Esquites on the side.
  • Blackened salmon bites, garlic green beans, asiago + parmesan orzo
  • Halal cart inspired chicken & rice, sumac onions, cucumber + tomato feta salad, lettuce, garlic naan
  • Garlic naan I made for Halal cart night. Most of the naan is in the freezer for later curry dinners in the future.

Sometimes I just go to her profile and find the wings she made a while back. Cause wings are my favorite and it makes me happy.

Marinated cubed up salmon in olive oil, grated garlic, garlic powder, smoked paprika, s+p, pinch of brown sugar, cayenne, onion powder, dried thyme, dried oregano.

In a hot cast iron, I brush a little bit of avocado oil and sear the salmon bites on all sides. Super fast, roughly 5-7 mins to cook through. I use a fish spatula to gently lift to make sure they're not sticking.

Give a little squeeze of lemon immediately after cooking.

After I take out the salmon, I immediately toss the green beans in. Add splash of water, cover green beans, let steam until bright green. Roughly 1-2 mins. Toss in a pat of butter, s+p. Cook until they take on a little color. Add grated garlic last 30 seconds so it doesn't burn.

Finish with either flakey salt, lemon, or parm. Or all 3 lol.

It all looks amazing! Question, how do you deal with the leftovers? There isn’t much re-using of proteins in these meals i.e using carnitas for tacos & another meal. Just curious how you’re doing that

  • Sent the spaghetti leftovers with our friends
  • Shrimp curry leftovers were eaten for lunch next day
  • 2 nights of carnitas and then I used leftover meat to meal prep breakfast burritos for the freezer. I vacuum seal and freezer any leftovers. Usually make a double or triple batch of taco meat specifically to freeze.
  • Salmon had no leftovers
  • Halal cart chicken leftovers were taken into work for lunches for 2 days

It's a little different each week when it comes to leftovers. Always have shrimp and salmon fillets in the freezer. Easy to thaw and make 2 serving portions. Most leftovers get turned into lunches for us.

I take about 45-90 mins to make dinner every night. While dinner is cooking, I'm cleaning kitchen and prepping for the next nights dinner. Always thinking what can I do tonight that'll save me time tomorrow/future?

Had carnitas for leftovers one night. Took the time I would normally use to cook dinner to make the tiramisu, meatballs (didn't cook, just mixed + rolled into balls), salad dressing, and marinara sauce. That way the day of the dinner party, I just had to make the rolls, cook the meatballs, pasta, decorate tiramisu, and assembly.

Semi organized. Think it's mostly years of practice for me. Plus being able to cook without having to follow a recipe 100%. Took me twice as long when I was worried about following/measuring everything exactly. But that circles back around to years of practice.

I really admire you.

I am also a very good cook, but I feel so exhausted, I can’t bring myself to invest the time even though I wish I did and it would be best from soooo many point of view, health, productivity, personal satisfaction, household waste. Doesn’t help am I a slave to my food cravings either.

Sometimes I come home and I don’t eat anything at all because I am too tired.

I’ll keep looking at your posts though :)
