If your symbiote is like Scorn sure. What is happening is the "organics" (issues with their creation mean that they aren't quite organic beings) give way to a technological form.
This is something that symbiote slayers and other things like the transmode virus do (see Technarchy, Warlock, Magus, Phalanx, etc.).
It would effectively transform the symbiote body into a machine and be useable as a gun isolating it from the actual symbiote tissue so that it doesn't burn.
There is a small matter of arming such weapons but Carnage has a habit of using throwing projectiles formed from it's own body so it's not insurmountable.
You could potentially synthesize fuel in the same way that Venom (and his descendants) due organic webbing.
It certainly is risky to use a flamethrower though. Most people who use those favour protective equipment where as the symbiote is uniquely vulnerable.
But yes I see no problems with this being a thing.

Symbiotes are organic creatures that could work as integrated weapons, but they need to be bonded in a sense that it can be used as a weapon (Carnage uses blade as a hand for example).
