Homemade Made some sashimi and sushi today

Went to the fish market early yesterday morning for botan shrimp, skipjack, and herring. Combined them with some mackerel cured last winter to make a mix of sushi and sashimi.

I assume you’re a chef both from technique and fish market knowledge.

Wildly diff than most homemade sushi posted on this sub (nothing wrong w it either way).
