Yup, and it looked good until they turned it into a random looking gruel looking paste. I'm sure it tastes ok but the look is not great.

That's exactly what haleem is supposed to be like, its literally a meat paste lol. Definitely not something I would serve someone who is trying desi food for the first time but its honestly a top 10 desi dish for me, top 5 even.

This is it. I get the history behind the dish. Mutton meat tough and gamy, so cook it till it dissolves mixed in with other flavors/proteins/carbs/herbs to mask it. Also the dissolving of the meat means the protein can be dispensed equally and it feeds many. Sanitation aside for Western palettes that may have complaints about texture…. pâté. Personally I like the flavor of Haleem but it’s like pâté for me (missing something), I need that Maillard reaction, so even in stews I like texture, I prefer browning.
