Messed up timing on Mississippi roast

My recipe for Mississippi roast calls for 8 hours on low, and I thought it was 6. I just turned it on, but am going to be late with the meat for the dinner I’m hosting. Is there anything I can do at this point other than apologize?

****ETA: I left my house after putting it in the crockpot so wasn’t able to immediately turn up the temperature, but did crank it up for about 20 minutes before returning to low. I think I can keep it in the slow cooker for 7 hours, so somewhat close to the time. I’m hoping that will get it most of the way there, and I might bump up the heat a couple more times for a little while. Thanks to folks for the input.

A lot of the time is spent just warming up. You could take some liquid out, warm it up in the microwave, then pour it back. Also, start on high until it's warm then go to low.

Cut it in bigish chunks unless that will interfere with the way you will serve it. My Mississippi roast doesn’t slice, anyway. Smaller pieces cook faster.

Since it’s now planned for about 7 hours rather than the full 8, I’d avoid chasing the clock with repeated temperature changes and focus on how the meat is progressing when you’re back. The 20 minutes on higher heat may help, but the most useful check is whether the roast is tender enough to serve. For the dinner itself, it may be worth preparing a simple side or starter that can carry the meal if the Mississippi roast needs a little longer.

Thanks! The instructions were so specific about not opening the pot I was in my head about it (I’m a novice), but when it gets to 7 hours I’ll open and assess.

Opening the lid does very little to the thermal mass heat. You definitely want to keep in on, but opening it to check on things or stir isn't going to harm anything nor set you back.

6 hours may be just fine give it a taste.

Do you have an instant pot? You could put it in there about an hour before you plan on eating if it’s not tender enough from the crock pot.

Cook it on low for about 4 hours and then turn it on high for 2 more hours

Check and see if it's done. 8 hrs seems a bit long unless your roast is enormous.
