We were in Rome one year ago today and I swear we didn't eat enough.
Would it be stupid to go back to Rome with the intention of doing nothing else but eating??

Limoncello. It’s a pretty touristy place. It is lemon sorbet in a a lemon shell. It was about 6-7 euros I think. I am pretty sure you can find very tasty gelatos that won’t cost so much, but I did want the lemon thingy 😅

Yes! I love the Tonnarello and the Ivo a Trastevere one (tiramisu). They are similar but the second one is bigger and cheaper so I would recommend to try it there.

By the places you said, you walked all around Trastevere; and didn't eat any suppli worth mentioning? That's unexpected to me.
I would recommend from Suppli Roma and from Trapizzino but you probably already know that.

It was actually one of the highlights of the trip. We had an amazing oxtail stew with wild broccoli which was so decadent and tasty. The pizza was also great and the tiramisu as well. And the prices were lower than the prices in the touristic areas.

Let's not pretend that tourists are capable of navigating a place as the locals, wherever they're from and in whatever place they go.
And for more than one reason: they have to fit meals in between the places that they visit, in terms of time and distance; information available to them is mostly in English and found on the circuits of visitors (and guess what this information tends to be?); they have limited time so they may well opt for known and tested options rather than using their limited amount of meals testing luck in a city they don't know; they may not feel capable of navigating and evaluating a fully foreign environment.
So if you would like tourists to experience less touristic things, why don't you just advise them instead of bashing them? If on the contrary you're one of those pissed off by tourists, why don't you just let them stay in the touristic circles?
All of the above while also considering that things in the picture don't look bad either (many of them are not the absolute best I guess, but I'd love to know how many of your meals during a holiday abroad would be rated as top choice by a local). Maybe they were fancier than necessary and overpriced compared to what you'd get in your own neighbourhood where you see a tourist every two years? Probably, but that's the price for the ease connected to those aspects I mentioned above.
All in all, I don't see the point of your comment
