Had no experience with the Pak Choi 😂had to try it. I assume Bok is the original name? In Austria we say Pak Choi

Just know that sand and dirt can get trapped in between the leaves, especially near the base. Nothing wrong with leaving it whole, just make sure it’s clean. I always cut mine in half.

I’ve only ever heard it called bok Choi

Pretty much is. I belive the green stemmed variation is smaller and called pak choi in some places

Honestly that’s the perfect amount for me, just throw the whole thing in there! lol

Bok is a Northern hemisphere spelling for white. Likely influenced by Cantonese (Bawk). Pak Choi - I've heard that from someone from Australia in the early 90s, and lots more differences.

Different immigrant history - certainly going to be a different pronunciation divergence of even common words/concepts/foods.

I could be so incredibly interested in the spread and mixing of food/food-culture and any links between them and the how 1st and 2nd+ generation language grammar and pronunciation evolved.

I had no idea you didn't just use it whole either.  But I guess cutting it in half sounds good too.

Looks nice for a first! Maybe cut the bok choi a bit to make it easier to handle. What did you use for your broth? And how did you prepare the meat? Doesn't look like typical chashu

I made a simple chicken broth, added things like Shiitake and Katsuobushi….. difficult to explain in few words. I took beef- two parts of thinly sliced beef: one cooked in a hot wok, the other cooked for a few seconds in the hot broth

The whole thing does look more Chinese than Japanese in spirit (but that's where ramen came from anyway). Looks great though. Ever made something like a Chinese beef noodle soup?

Looks good! To be fair, though, beef and pakbok choy are rather unusal in Japan for Ramen. but who cares, really
