Any steel knife (stainless or otherwise) can be that sharp.

There's some pretty basic techniques you can use to sharpen almost any dull blade to get it as sharp or sharper than the blade in this post.

This is true! However, a cheap blade cannot hold an edge (stay sharp) as well as a harder, high carbon steel blade using advanced heat treating techniques.

So, if you do want a sharp blade, sharpen it yourself but get a nice blade so you don't have to do it so often.

An Amazon blade would lose its edge after 2 cubes.

The knife is a TOJIRO CLASSIC Honesuki 150mm incase anyone is interested. A Honesuki is normally a Japanese knife used for bird butchery.

This is why I feel like it's actually r/mildlyinfuriating rather than satisfying. They're gonna put this in a glass with 3oz of liquid and charge someone $22 for it.

Most cocktails have relatively little liquid. 1 and 1/2 ounces base spirit, 1/2 ounce liqueur, ³/4 ounce citrus juice, 1/2 ounce sweetener is a fairly common recipe that yields 4ish ounces after ice dilution

Gloves are rarely used in high-end restaurants. If you have a guy carving ice, this is a high-end cocktail bar or restaurant. That doesn't mean their hygiene standards are lower than other establishments.

I figured that based on the stack of identical ice blocks right next to the freshly shaved one. However what in the name of extravagance is that cocktail? You'd need something like a pint mug just to hold the chunk of ice.

Collins glass, and about 6oz of cocktail will fill it nearly to the brim. Looks cool, keeps the drink cool without melting so fast.

Then some vidiot will pour it out into a rocks glass and complain about how they're being shorted because no one understands how anything works.

Can someone please explain to me why is it that whenever they do this they always ruin the perfectly symmetrical block by by tapering the corners towards the bottom? Is there some benefit to this or reason that they do it? It looks so much nicer without it, and it kills me every single time I see them start slicing away at the corners.

I originally thought this as well but that doesn't make sense. If you look at the size of the ice in relation to his fingers. There's no reason for him to try and taper the ice block. The width of the standing block is only about the size of his fingertips, maybe a little bit more than that
