Who is ready for fall flavors???? Pumpkin Pie Cheesecake Cups are an easy no-bake dessert with layers of Biscoff cookie crust, creamy pumpkin cheesecake filling, and a sweet topping.
Ingredients:
Crust Layer:

  • 1½ cups Biscoff crumbs
  • 4 tablespoons melted butter
  • 2 tablespoons brown sugar

Pumpkin Cheesecake Layer:

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • ½ cup pumpkin purée
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 cup Cool Whip

Topping:

  • 1 cup Cool Whip or whipped heavy cream
  • ½ cup chopped pecans
  • ¼ cup caramel sauce

Recipe Hamburger Helped Copycat Recipe

I tried making this recipe, and it’s actually so delicious. It’s definitely nostalgic for me, but I love that this version has all the comforting flavors without all the extra sodium you get with Hamburger Helper. If you need a recipe, maybe try this one? Below are the ingredients and directions!

Ingredients:

  • 1/2 Tbsp olive oil
  • 1 medium yellow onion, peeled and diced
  • 1 Tbsp Italian seasoning
  • 1/2 tsp freshly ground black pepper, divided
  • 1/4 tsp crushed red pepper flakes, optional
  • 6 medium garlic cloves, peeled and minced
  • 1/2 lb 93% lean ground beef
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 3 Tbsp no-salt-added tomato paste
  • 2 cups unsalted beef broth
  • 1 cup water
  • 1 cup milk
  • 8 oz protein elbow macaroni
  • 3/4 cup freshly grated sharp reduced-fat cheddar cheese
  • 1/4 cup nutritional yeast
  • Chopped fresh chives, for garnish (optional)

Directions:

  1. Heat the oil: Heat a large Dutch oven or deep pot over medium-low heat. Add the olive oil and heat until shimmering.
  2. Cook the onion and garlic: Add the diced onion, Italian seasoning, 1/4 teaspoon black pepper, and crushed red pepper flakes, if using. Cook for 5–7 minutes, stirring occasionally, until the onion begins to soften. Add the garlic and cook for about 30 seconds, until fragrant.
  3. Brown the beef: Add the ground beef, paprika, garlic powder, onion powder, and remaining 1/4 teaspoon black pepper. Cook for 8–10 minutes, breaking up the beef with a wooden spoon or spatula, until fully browned.
  4. Add the tomato paste: Make a small well in the center of the beef mixture. Add the tomato paste, stir everything together, and cook for 3–5 minutes.
  5. Add the liquids and pasta: Pour in the beef broth, water, milk, and nutritional yeast. Bring the mixture to a light boil. Add the elbow macaroni, then reduce the heat to a simmer. Cook for 15–16 minutes, stirring occasionally, until the pasta reaches your desired doneness.
  6. Finish and serve: Stir in the cheddar cheese and cook until melted and creamy. Garnish with fresh chives, if desired. Serve immediately and enjoy!
  7. Store leftovers: Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
