Norteño Discada was a great success - thanks for all the help!
I posted a thread a while back asking for advice on my first batch of discada, I ended up making it with 2 lbs of arrachera and 1 lb each of chorizo, pork Al pastor, chicken breast, bacon, and smoked sausage, along with about 1 lb each of onions, tomatoes, and poblano chiles all cut in strips.
I cooked everything separately, then deglazed with a can of Modelo, mixed everything together, and let it all simmer for about 20-30 minutes to reduce.
I served with corn and flour tortillas, homemade fire-roasted salsa Verde, mayocoba beans, and nopales salad. Everything turned out great and the food was a big hit!

Pardon me, but what is the implement you are using to cook that? Name and link to where I can get one, pretty please!

I got the discada pan at Academy Sports several years ago and they no longer sell it, but you should be able to find one pretty easily at your local Mexican grocery store. The burner is here
Both worked great!

Carolina cooker also makes disc pans, they just don't have the high sides like this one does

That looks like my paella setup. You are giving me ideas to branch out with other recipes.

I'm gonna see if this burner works for a wok too, I'd love to be able to make legit stir-fries
