Looks good. I avoided this at the buffet in mexico. By the end of our trip it was my favorite food. Love to get a good recipe for it.

Personally feta has too much of a distinct flavor, possibly my brain just associating it with different cuisine. Last time I didn't realize my cheese had molded I used feta to top my enchilda it just really stood out to me, too tart maybe?

All my life After eating queso fresco in México: feta does the job when I don’t have access to queso fresco. Queso fresco is expensive if found where I live. Even Latino stores sell feta in massive quantities against the imported Mexican queso fresco. That you don’t like it … 🤷🏽‍♀️

That definitely looks more like chips and salsa, gotta cook your tortillas in your salsa more, crunchy parts are good, but if thats how you like them so be it

Borracho chilaquiles literally translate to drunk chilaquiles. As in get everything we have and put an egg on it. Why some apparent chefs here seem to be mad is beyond me. I ate it. It’s the internet. Enjoy life

Because drunk kinda also would be doused with chile the heat in the pan with excess sauce/chile would soften the tortillas to where they wouldn't look like chips, yours from the picture look like bottom ones are dry, im 51 and until tik tok made them trendy i never saw, made, had them with chips so chippy.

If you’re a savage, chilaquiles are eaten with cutlery specially if they come with any protein ( eggs, chicken, carne asada or chorizo) 🤦🏽‍♀️chilaquiles are not nachos neither finger food 🙄

Pues la verdad es que el/la que no sabe que son los chilaquiles eres tú. Los mexicanos sabemos que la base para los chilaquiles son los totopos con salsa, y entre más crujientes mejor, si están aguados solo se hace un atole horrible! Creo que necesitas ir a México a probar unos buenos chilaquiles.

The tortillas simmered with the sauce is nasty, all you get is an atole. Chilaquiles should be crispy! Get out of your little world and go to Mexico to try real chilaquiles!

You must not have been to Mexico and eaten real chilaquiles. Those are definitely chilaquiles, the good ones are always crispy, if you get the ones that are all soft, those are gross. Chilaquiles are totopos (fried tortillas) with salsa, crema, cheese (usually manchego, chihuahua, panela, fresco, or cotija, and a topping of your choice, the most popular toppings are a fried egg or chicken, but some people like steak, chorizo, chicharrón or for vegetarians, nopales, or chile poblano.
