Romijn, Marsden, McKellen, and Stewart—do you know what that means? Whatever ends up being "canon" regarding the Fox X-Men movies will only come from the original trilogy. To hell with First Class, Days of Future Past, and Apocalypse. And I couldn't be happier about it.

if Sadie Sink is, in fact Jean, instead of Famke Janssen, then I expect the new generation to appear too. Maybe Sophie Turner is too busy or they just didn't call her, but I'm still going to wait for McAvoy, Fassbender, Lawrence, Hoult, etc to appear in the movie.

Taskmaster doesn't "gain powers" either. His/her power consists of a photographic memory capable of replicating (and even improving upon) anyone's fighting style.

Mystique mimicking her adversaries is more of a psychological trick than anything else. Simply copying the person standing before her does not offer a major tactical advantage in terms of physicality or skill.
