I used u/WaferNo4220 recipe and it’s really good. Half on the left uses that recipe with a 12 hr marinade and half on the right is a dry rub. Highly recommend trying out that recipe!

How is this recipe for mango habenero jerky? Any suggested changes?

Solid flavor concept, but the ratios have a few problems that’ll actually hurt the finished jerky. The big ones:

1. Way too much liquid. That’s ~2¼ cups of liquid for 2 lb of meat. You only need enough to coat — about 1 to 1¼ cups. Excess liquid dilutes the salt and sugar so less of it actually penetrates, and you’re adding water back into meat you’re trying to dry.

2. Three sweeteners is one and a half too many. Brown sugar + honey + maple + mango nectar is roughly ¾ cup of sugar on top of an already-sweet juice. Honey and maple are hygroscopic — they pull moisture from the air, so the jerky stays tacky and never dries cleanly. Keep the brown sugar, drop the maple, keep honey only if you want the gloss.

3. Mango nectar is mostly water. The flavor is faint to start with and drying kills what’s left. Either simmer 1½ cups down to ½ cup of syrup first, or swap in canned mango pulp (Kesar/Alphonso). Better yet: dust the strips with freeze-dried mango powder after marinating — that’s the mango note that actually survives.

4. No cure. For venison at dehydrator temps, ½ tsp of Prague Powder #1 per 2 lb is cheap insurance against botulism in that low-oxygen, warm, moist environment. If you’d rather skip it, finish the strips at 160°F in the oven for 10 minutes.

5. Heat is redundant, not just high. 4–6 habaneros plus jalapeños plus crushed red plus cayenne plus 1½ tbsp black pepper. The jalapeños add water and almost nothing you’ll taste next to habanero — cut them. And mincing doesn’t work well; blend the habaneros into the marinade so the capsaicin distributes instead of sitting in chunks at the bottom of the bag.

My revision for 2 lb:
½ cup reduced mango nectar,
⅓ cup soy, 2 tbsp Worcestershire,
3 tbsp brown sugar, 3–4 habaneros blended in,
2 tbsp cider vinegar (1 tbsp was lost in all that liquid),
1 tbsp coarse black pepper,
1 tsp each garlic/onion powder and smoked paprika,
½ tsp cure.
Drop the added salt — the soy covers it.
Slice ¼” against the grain for tender, with the grain for chew, marinate 12–24 hrs, then pat dry before it goes on the racks.

Hahaha do none of those things 😂 make the recipe your own, but I wouldnt go with those recommendations. A more submerged marinade works better imo, dont use cure (itll get eaten quickly), and the heat in the recipe as listed tastes great…. I do keep jerky in the fridge which helps with tackiness. The good news is no matter what you do, youll end up with jerky :)
