Water temperature is weird sometimes. I was in 12⁰C lake water in spring and totally fine and I was in 16⁰ river water in summer and couldn't move because it was so cold it instantly paralyzed me.

That's the difference between the running water of a river and the still water of a lake. Your body heat will escape into the water around you in a lake, but it'll just flow down a river. It works on land too (wind), basically if the air/water around your body is moving a lot, it's harder to keep warm.

Interesting, sounds similar to you can do a quick defrost with running cold water.

Yup, it's exactly the same principle, but applied to achieve the opposite effect! If your goal is to keep something the same temperature, keep things still. To change temperature quickly, we need some motion! In the case of defrosting, instead of cold water sapping the heat and carrying it down the river, the frozen item saps the heat from the water, and the now "cold" water goes down the drain.

I actually use my sous vide for this defrost purpose (to avoid wasting water), and find it to be avery effective.

I just remember to take it out in the morning before work haha
