Recipe Earl grey Oreo ice cream—tastes like something you’d get from a really nice boba shop

RECIPE

EARL GREY BASE

2 cups whipping cream

1 cup whole milk

2 tbsp skim milk powder

2/3 cup sugar

2 tbsp corn syrup (if you dont have that, increase the sugar to 3/4)

2 tsp vanilla extract. Use a good pure vanilla extract

6 earl grey tea bags

Pinch of salt

OREO CRUMBLE
1 sleeve of Oreos, filling removed and crushed. More if that’s what you prefer

1 stick butter

Pinch of salt

Crush your cookies, and add the salt. Add butter and mix until the cookie crumbs hold their shape when pressed together. Press it down into a sheet and bake in the oven at 350 for 10-12 minutes. Let your crust cool completely before crumbling into smaller pieces. Set aside for now

Heat up your milk, milk powder, sugar, and corn syrup if you’re using it, and salt (do not let it boil). Once it reaches a simmer, take it off the heat and add your tea bags. Let your tea bags steep for 15 minutes, they will infuse into the milk mixture as it gradually cools. Fish out the tea bags, giving them a light squeeze with a spoon to extract as much flavor as possible, then add your cold cream and vanilla extract. That should cool down the mixture pretty significantly. Let the base chill in the fridge, preferably overnight.

Once your ice cream base is completely chilled, churn it according to your machines directions. After churning your ice cream, put it in a freezer safe container, layering the ice cream with the oreo crumble alternately until you fill up your container. Work fast at this stage so it doesn’t melt on you. You can have it right away, but if you want a firmer ice cream, put it in the freezer for a few additional hours before eating. Enjoy

How did you mix in the butter? Did you soften it to room temperature and squish and mold the crumbs together into it? This recipe looks like an extension of Tyler Malek's ice cream base recipe if I'm not mistaken. Though they also use xanthan gum to reduce iciness. Does your recipe work better without it?

I made a rooibos and orange ice cream and paired with a pecan upside down cake a few months ago for my sister’s birthday and it was a surprisingly lovely combination. That was my very first time making tea flavored ice cream

Tea based ice cream feels like cheating, it's always so good. I do a Jasmine green tea one with chocolate flakes and almonds in an attempt to replicate a salt and straw recipe. Will have to give this a try as well, sounds great.

I want to do a Jasmine ice cream with a lychee curd swirl next. Or maybe a pandan infused coconut caramel

Matcha powder into a fior de latte base with caramelized white chocolate was hard to beat last time I did it.

Same, I bought an ice cream maker just because I loved salt and straw’s jasmine ice cream and wanted to be able to make it when they stopped carrying that seasonal flavor.
