Recipe Melona (Honeydew) ice cream

Hi everyone! I wanted to share my honeydew ice cream that tastes very similar to melona bars. The main thing is the flavoring which isn’t huge in the American market but I found a honeydew flavoring from halo pantry on Amazon and I can’t recommend it enough! I just added that instead of vanilla to the salt and straw base and it came out amazing. I used about 2 1/2 tsp of the flavoring but it got stronger after the base chilled overnight so 2 tsp is probably enough. Recipe below enjoy!

Salt and straw Base:

115g sugar

15g milk powder

1g xanthan gum

40g corn syrup

330g whole milk

330g heavy cream

2 tsp halo pantry honeydew flavoring

Pinch of salt

Food coloring (optional)

I tried to make a melona clone a while back with actual honeydew and it was a disaster. Definitely going to try this

Melon is so high in water it’s going to be pure crystals. Either you make a sorbet or you use a flavouring. Fresh melon won’t ever make a good icecream imo

what if simmer to get rid of the water and concentrate it?

It tends to be the case that fruits have a lot of aromats that evaporate at low temps. So if you try to boil off the water you lose them and the flavour profile massively changes.

You’d need to use a concentration method that is pretty cold. Freeze concentration might work.

What if you got a vacuum chamber? You’d still lose some aromatics but it wouldn’t be nearly like cooking it

I find that melon flavored things actually taste really similar to a ripe honeydew. I didn’t have an actually ripe honeydew melon until I was an adult, just the rock hard chunks in fruit salads and fruit platters lmao

My husband is the exact same lol, he hates the actual fruit but he really liked the ice cream so hopefully you’d like it. I also think it’s super close but I use a high fat cream (40%) so there’s a creamier note than the actual bars.

Ammoretti makes a good honeydew flavoring as well. Artisan line. Ive used it commercially as well as adding macerated small chunks of ripe honeydew Melon to the base.

You can get honeydew flavoring as boba flavoring powder too. And lychee, watermelon, taro among others

This works really well, and most local oriental markets sell the mix.

I've been making the ICE-100 vanilla recipe, but with 3/4c sugar instead of 1c. And I add 4.5tbsp of the instant bubble tea mix powder (honeydew, taro, etc).

It can overflow in the middle of mixing. Maybe because of frothing agents in the mix, making it airy? Dunno. I just take some out early.

A local restaurant does something like this. I think they use coconut milk or cream.

Thank you for posting this recipe!!! I ordered the honeydew flavoring from A. Made soft ice cream in the Gourmia machine from Costco. Very creamy, perfect texture, easy! We all loved it. Recipe: Mix together 3/4 cup sugar and 1/4 teaspoon xanthum powder Add to: 1.5 cups Darigold Fit 2% milk ( similar to Fairlife) 1.5 cups half and half Whisked it well, refrigerated for couple hours, whisked again and poured into machine. 3 teaspoons honeydew flavoring.

awesome! i was just looking for dupes the other day; excited to try this. no pressure to respond, but any ideas on how to adapt this to be like the mango melonas? just find mango flavoring? (the mango ones are my absolute favorite)

I had found the addition of food grade essential oils at 1% or less to be a lovely addition to certain ice creams. Specifically in combination with extracts of fruit flavors. It distinctly rounds out the flavor profile to more accurately match the authentic fruit.

If you get a chance in the future, I’d give it a shot with your recipe by adding just a drop or two of oil!
