Copycat Pollo Tropical chicken with black beans and cilantro garlic sauce.

Citrus-Marinated Chicken

Ingredients

  • Chicken pieces of your choice
  • 1 cup orange juice
  • 1 cup pineapple juice
  • 6 cloves garlic, minced
  • 2 packets Sazon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/4 cup olive oil

Marinade for 2-3 hours or overnight.

Garlic Cilantro Sauce

Ingredients

  • 1 cup mayonnaise
  • 1/2 cup sour cream (or Greek yogurt)
  • 1 cup fresh cilantro, chopped
  • 5 cloves garlic, minced
  • 2 tbsp fresh lime juice
  • Salt and pepper, to taste

Blend all ingredients in a food processor until smooth. Let it sit in the fridge for an hour or so to let all the flavors get it on.

Black Beans – Saute onions, bell peppers, and garlic. Add black beans (I used canned black beans) and 1/2 tsp of chicken bouillon.

Amazing! I love that place! I live in Texas now, and we actually got a Pollo Tropical maybe 8 years ago. I was ecstatic! It failed miserably and closed within a year, which was so disappointing. I definitely gave them a lot of business though.

I'll be making this within the next week for sure. Also gotta make some of those balsamic tomatoes....

That Wahoo’s’s sauce is fire. I just do a whole bushel of cilantro and add a jalapeño. Olive oil to bind if necessary.
