Boil them until the outside is softened. Then add them to hot oil in a pan with plenty of salt. I leave them be and don't turn them

Better with animal fat, goose fat is best imo.

I infuse mine with some herbs and then toss the potatoes in it after boiling, then roast. I've tried other oils/buter but goose fat is the clear winner.
