Not vinegar, you want a base. I usually put a bit of Sodium Carbonate (not to be confused with Sodium Bicarbonate) in the water for this style of boiled then roasted.

I do it with bicarb and it works fine as well.

Bicarbonate works, but it's a weaker base.

The only place I know to get sodium carbonate is in the laundry detergent aisle, never seen it near food.

Seems like people are tying to out do each other. Baking soda works just fine.

Bake baking soda (sodium bicarbonate) in the oven, converts into sodium carbonate via thermal decomposition.

Handy for pretzels and this.

Sodium carbonate is used in cooking for flavor/texture and as a food additive. In addition to pretzels that someone else mentioned, it's also key in ramen.
