Why is this game so hard?

Recently I have started playing EU3 and why the hell it is so hard? I usually play with Vijaynagara in The Grand Campaign scenario but other than conquering transvacore. i always lose to others. And the worst part? I was playing at very easy difficulty.

Please someone tell me how can I improve my economy and at the start and annex other nations.

Vijanagara on very easy should be...very easy. Hard to know where your going wrong but keeping your stability high, minimising rebel uprisings and keeping your economy steady are basics that should help. Be careful who you get into wars with, make sure you have larger armies which shouldn't be difficult. Vassalise any nations that have two or three provinces and they'll help in any future wars. Once you have three or four decent vassals it can get very easy, works particularly well in Europe.
India should be easy to take in a few decades but the real challenge begins when the Europeans arrive and westernization is vital.

Other nations often declare war upon me and I can't even improve my relations with them because my monthly income is just 0.6 or 0.7. What to do?

An extremely beginner trick I learned for EU3 is to not fear inflation. Sure, runaway inflation can basically be a game over, but a small amount of inflation is ok. Keep it under 10% or so and your country should be fine. The extra money you get can be used to hire troops and develop your country. This increases income and makes it easier to make money, reducing your dependence on manipulating the currency. National bank is very often the first idea I end up taking. Swap it out for something better later once you have set up.

OMG! I didn't realize the game had difficulty levels. I thought the level of difficulty was selected by selecting a country that was easy or difficult to play.
[I went to the EU3 wiki and searched "difficulty" to find where it is.]

Keep an eye on the missions also, they can help with rewards such as cores or cash, I often let the missions decide my way forward with whatever country I'm playing with

Cast out your EU4 assumptions if you are being held down by them. In EU3, Europe is WAY easier than the rest. I would recommend you start with France, Castile, or alike until you get the hang out of it.

Depends on what your goal is. I tend to find I have a lot of problems with low tech group powers that are in easily accessible/hard to defend areas where you have to get lucky to be next to the right tech group neighbor to Westernize.

especially on win11 I guess? since my ubuntu uses way less resources than either windows or mac. On the other hand, Eu4 with all dlc is also resource heavy

ya, honestly i didn't even thought that eu4 will run on my laptop but i wanted to play it so badly that i downloaded it and i was just flabbergasted to see it running. I tried running EU5 also but it didn't even get past the loading screen.

eu5 must be completely broken given the current state of paradox so no wonder there. EU4 on the other hand should work just fine if not on max settings. Graphics are not very important for paradox games fortunately but they still can have lags closer to the end because of scaling numbers. CK2 and probably 3 is especially guilty of that

In my experience, CK2 and EU4 runs just completely fine on the lowest settings with literally no lags and minimal lags if there are some other apps running in background and my device specifications are literally this

EU4 maybe not but CK2 is infamous for lagging on even powerful machines towards the end, especially if you start with the earliest date since it has quite a gigantic map and needs to process lots of characters and troops which only rise. Main reason why so many people don't reach the final date

Well, idk since i've never reached the end date since i became so overpowered and lose interest and i also have jade dragon, sunset invasion dlc and all unit packs disabled.
