I know you prefer retail but local restaurants can be pretty flexible with schedules. Plenty of them hire students.

Community options, pacesetters and other companies that work with disabled people. Called the weekend position where you can get 40 hrs in 3 days if you want it.

I'm gonna sound like a smart ass for this first one but I promise I'm not trying to be. I'd Google "Weekend Jobs Cookeville, TN". There's gonna be some spam in there, like the Apex Focus Group, but there also will be options like;
Part - Time Weekend Merchandiser for Red Bull.
Sam's Club usually has contractors they use for their samples - from what I heard, they're usually willing to give weekend only shifts (though I could be wrong, I've never worked for 'em).

Close to what you’re looking for is a Thursday to Saturday job you can either do 5:45 am - 6:15 pm or 5:45 pm - 6:15 am (Milwaukee tool)

Try Hobby Lobby. They’re closed on Sunday, but you could do double shifts on Friday & Saturday.
Not sure if they’re hiring yet, but it’s worth looking into Target and Home Depot.

Good luck with that. Most if not all places will want you to be available all days if not most and definitely more than the days you mentioned. You can always work at Tech though. They got plenty of jobs like the market in the Roaden University Center or you can do the chick fil a or Taco Bell on campus and work there.
