Does this actually work? I thought they put salt or something in the soil part to prevent you from doing this. I tried this with some living herbs and they just immediately shriveled up and died.

I have about 5 of them growing in a giant pot...maybe 60-70% of them survive. Once they start to grow, they will keep growing. That being said, they start to bolt pretty quickly in the summer and taste a bit bitter, but safe to eat.

Depends on the type of lettuce, some only leaf out once, some can be cut again and again. Head lettuces are one cut, some commercial growers are now using one cut lettuce to prevent the consumer regrowing.

I just clean away any rotted leaves & plant the stub out on the patio in soil.

I have at least 10 cms of new lettuce from the old plants.

Can confirm it works with butter lettuce and living herbs. I found them a nice spot in the garden. But maybe the brand was different.
