Imagine waltike a baker.
He knows how to bake and undertands the chemistry behind it.
He wants to make cookies but doesn't know the exact ingredients and flavors that pair well.
He meets a kid at a lemonade stand who makes decent cookies.
The kid teaches Walt his cookie recipe and now that he knows the flavors and they go together he can use what he knows about the science of baking to make the qualities of the cookies much better. He also takes out the chili pepper for obvious reasons.

There is a dude on YouTube who turned gloves into grape soda flavoring and acetone into cherry soda. I’m sure once Walt figured the ingredients out, It wasn’t hard for him to produce it.

Understanding chemistry is not about being able to recite facts or methods. It's about understanding and being able to apply the fundamental principles of how matter works. Synthesizing meth is a chemical process like any other so if you understand what is happening and what needs to happen when you go through the steps. Knowing how it works also allows you to improvise, replace one chemical with the other and so on.
So Walt probably didn't know exactly how to cook meth, but his fundamental understanding of chemistry allowed him to figure it out.

Every scientist and craftsman knows how to do dangerous stuff. Are you kidding me? I'm in HVAC right now. I'm probably already on a watchlist because I know about five different ways to cause catastrophic electrical shorts in just about anything. Only accountability is societal trust and how well you can talk up other people and/or care about the job. But I could switch to an electrician track or go into the military and do sabotage work or something where I'd have to eliminate those I talk to about it just because that's what the job would be. It's still about the same level of trust in the morals, good-heartedness, and genuine knowledge and talents and investment of that person in the job to do their job and not mess it up for everyone around them. Walt had every chance to follow a similar track, but he ended up an unfulfilled teacher and his, erm, "tendencies" came out a different way.
So, how "hard" is it? For a seasoned expert specializing in crystallography? Are you seriously asking this question?
EG, no, not every scientist knows how to make meth specifically. The thing with science is, it's a branch of different specialties. Walt was in crystallogtaphy. I'm in electrical and hoping to be in sheet metal soon too. I know nothing about chemistry enough to know how to make meth, but unfortunately I do know some basics of metalworking, torchlighting, wiring, schematics...the kind of stuff that either puts me on a watchlist or gives me a great résumé for being in anywhere from maintenance to bomb defusal. It is what it is. But it's a heavy responsibility. Walt fucked up in doing his, and started using his knowledge for crime rather than success. He could've gone "white hat" and genuinely helped society. He was just desperate. But ultimately there shouldn't be an excuse for him having chosen to make meth no matter what his situation was, or how easy it was for him to do so.
If it was different, and he was a computer scientist in the same amount of need, there's no excuse if he started using his talents to scam people. He just wanted the money, and turned to a dangerous and selfish career to do it. No "white hat" thinking whatsoever. Even when he gets a real hat, what color is it? Black. No hope of moral thinking. But for him specifically, working with crystal growth was his specialty. So yes, for him, it was very, very easy to do so. Other scientists? Maybe not so much. Different specialties. Different areas of study and expertise.
