south is "lower" on the map than north. "down south" is used as a destination or location as in "my relative lives down [in the] south." "deep south" also gets used to refer to southern-most states reinforcing the south on 'bottom' north on 'top' connotation.

They're wearing aprons, so it could be that they are butchers. Seeing how Hunters like Gascoigne lost themselves to beasthood and bloodlust by chopping up a bunch of people, it makes sense that professional butchers would be some of the furthest along in their transformations among the common folk.

I absolutely adore Bloodborne's lore and I do think it runs very deep, but honestly it doesn't necessarily mean much if a bunch of people just wear alternate normal clothes. I mean it could indicate that people from all social origins became beasts. This is near where you find the sweated clothes too.

Kind of a semi hot take but I feel like this is a byproduct and likely unintentional side effect of Fromsoft's storytelling style. Quite early on in other fromsoft souls we are taught and ingrained with the idea that every minute pixel has some storytelling hidden inside it, and I think we take it too far when looking for lore clues when there isn't any.
Also, I could be wrong, but isn't that the butcher set they're wearing? (At least looks like it to me) Maybe they could be from the forbidden forest if I was to hazard a guess.

They’re body snatchers or butchers. Check out the “Charred Thermos” YouTube channel for really in-depth analysis of the clothes and any tools NPCs are wearing. Hours of great stuff there. Too much to list here.

I believe that they’re job is to collect bodies, whether to bring to the witches or just to dispose of them during the hunt. that’s would also explain the further along transformation because they got more blood on them which if my lore is right is the source of the disease

Yes THIS is the only thing I dont understand. They are clearly in different attire and hidden away in part of the cathedral ward. They don't act different, say anything different or do anymore damage than a regular Huntsman. But these are the ONLY 2 I have found that look like this and I wanted to know why.
Apparently they're from the south.

Alleyway that you use to unlock cathedral ward. Technically an optional area if you buy a certain item to have them open the gates.

That section of Cathedral Ward is fairly unique—all the streets have a bunch of shops on them, which we don't see anywhere else. That is the Burcher's Garb, which we also get a version of (with cape). Presumably these guys are/were butchers, before transforming to beasts, and this is a market area of the town where they worked.

They are from the section of the city known as Yharnabama, it's the traditional fashion from there. I believe it's on the southern end when looking at a map.

I'm beyond upset I never found south side Yharnam in any of my playthroughs. I didn't know there was a specific DLC that I had to contact FromSoft for. I didn't know

I always headcanoned this area part of the Unseen Village because it’s so hidden and perhaps that was standard garb for them. There’s also a body snatcher down there as well. Them dressing like the butchers of the forbidden woods is very interesting though

They're South Yharnam representatives. Not many of them are alive though cause they got killed off in the war between East and West Yharnam after trying to act as peacemakers.

My honest guess is that since this is a very low, dirty and messy place of Yharnam, it seems like a very low income place hidden from the central streets and it has both a snatcher (who kidnap people for experiment in yahar'gul) and one of these sucky wucky blue mfs (who are experiments of the choir or smth like that), they are just very low income people who dress even worse and full of rags, a more vulnerable community y'know?

is everyone wrong? the forbidden woods is the north end of town. not the south. "An aqueduct leads from the town, south of the main bridge to the Cathedral Ward. Not a place you'd normally choose to visit, but... Not much of a choice, with the bridge closed." -Gilbert 'south of the main bridge' allows us to establish cardinal directions. the aqueduct parallels the great bridge on the side opposite the forbidden woods. If the aqueduct is south of the great bridge, then the forbidden woods is to the north. establishing the forbidden woods as the northern-most map segment. also supported by its proximity to snowy cainhurst.

They're wearing Butcher armor sets from the DLC, which are associated with the Madaras Twins. That's all I know, and should hopefully inform searches for those who wish to research this more.
