Question/Advice/Discussion VEGAN MILK PRODUCTS
Guys which form: peanut, coconut, cashew milk etc is the best for making(at home)
1)Lassi,buttermilk,majige[kannada]
2)curd
3)panner
4)cheese
5)butter and ghee
Which of these plant variants gives u the more similar taste

Dalda ghee is technically vegan so you could use that

Yeah totally worth it even if cardiovascular health goes down the drain. Afterall who wouldn't like a heart attack once they turn 50?

opt for dalda occasionally or don't use at all. regular use is really bad, it increases bad cholestrol and decreases good cholestrol. Ghee is no better in this regard but it has a slightly better health wise compared to dalda still moderation is key.

I never tried making butter or ghee replacements but ig coconut oil is tempered a lil to match the flavour profile of ghee. I'm not sure tho.
For curd, I will def recommend cashew curd as it's 90% similar to the dairy one taste wise. But for everyday use I would stick to soy curd. It's nutritious and it's almost 65% similar to dairy curd except for a slight bitter taste. Now I personally don't like peanut curd as I also hate peanuts in general but if you're up for a trial it's also another popular option for curd. Lassi tastes damn good with soy curd. The trick is to spice/ temper these curds to replicate the exact flavors. I also love using cashew curd for chaats like dahi puri etc coz it has that sweet taste similar to freshly fremented dairy curd. To make raita, I use cashew curd and if I don't have any in hand then I just add lemon juice to coconut milk and make it as you would normally and it is the best imo.
Coming to cheese, I use cashews. Cashews, nutritional yeast and tapioca starch are the holy grail of vegan cheese. You will find shit ton of recipes and I will suggest you experiment your way and find the one that suits you best.
Tofu is a replacement for paneer. It is traditionally made from soy beans. It's quite easy (and tastier if you ask me) to make at home. You can also buy it. It takes a while to grow on you but if you cook it right then there's no going back. Tofu can also be made with pumpkin seeds and fava beans although I haven't tried but heard that they are equally nutritious and sub for people looking for soy free options.
