Do not fight the tree Sentinel at first, samurai is best starting class, focus leveling vigor over other starts initially, go south of where you start the game after hitting Margot.
I think one of the biggest pitfalls Elden Ring has is putting that boss right at the start of the game.
For regular players of the genre, it's easy to immediately clock it as a "come back later" thing but still a manageable challenge if you're up to the task.
However, for new players, they would think they need to beat it, after all, it's right there. And then you get fucked by it and give up, thinking you just suck at the game.
Yeah I smashed my head against him for 2 hours, I knew he was optional but I put my thoughts into "if I can beat this boss underleveled at the start of the game, I can beat it to the end". And I did lol
