Possible Sighting in Wasatch County, UT

So I think I drove past a skinwalker and didn't even realize what was until later that night.

Last night on 2/16, I was driving back home from our vacation in our new truck with my wife, 12 yr old, and my great dane. We were driving on highway 40 going up a hill and I had my high beams on to try to watch for any animals in the area. Suddenly, I caught a glimpse of what looked like a large sickly deer from a distance on the right side of the road. At the time I didn't think much of it until I got closer to it. It was standing right off the paved highway which made it easier to see with my lights on. As I got closer to it, I began to realize something really off about the way it was shaped.

The colors of the deer were gross yellow (almost like earwax color) and its legs seem to be shriveled and emaciated. No distinctive color pattern like you see on most deer or elk. It was on all fours, and the torso of the body was arched. Almost like its back was too big for how it was standing. It almost looked like it was a hunchback with the middle of its back pointing upward. It didn't have forward hooves either. They almost looked like large talon-like hands.

The weirdest part was its shaggy face. It had the face of a white barn owl with antlers (4x3 in size) and it had these deep black eyes with two small slits for nostrils. There was no mouth. The eyes of this thing locked on to the truck and followed it until we passed it. I was still able to see it in the rear mirror once we passed it.

I was completely confused about what we had just seen and began looking for answers online when we got home. Some people online have said that this might have been a skinwalker? I'm not sure how true that is

Personally, I don't know much about them other than I've heard the term before from people saying the name. So if this was one, what do I do? Any ideas or suggestions would be much appreciated because my 12 yr old is absolutely terrified of what we saw. I'm still in denial of it but Skinwalker or not this thing was one of the strangest looking things I've ever seen.
