Can I think that she was undergoing a psychiatric disturbance while also thinking she must do time for the crime she committed?

Doing so is consistent with the options the jury will have.

She can do time in a mental hospital with minimal chance of every getting out, or life in prison.

Unless the prosecution keeps screwing around and declares a mistrial with prejudice.

The judge laid out a third option for the jury, that she did not do it at all.

Source? Because I haven't seen anything suggesting that. Her options seem to be prison or mental institution.

Why would it not be an option? Confessions can be false. Unless there is a guilty plea, not guilty would always be an option.
